<li><em>250 ml vin rosu</em></li>

<li><em>4 linguri ulei de masline</em></li>
<li><em>20 ml ulei</em></li>
<li><em>piper boabe (10-15)</em></li>
<li><em>piper macinat 1/2 lingurita</em></li>
<li><em>coriandru 1/2 lingurita</em></li>
<li><em>ienibahar macinat 1/2 lingurita</em></li>
<li><em>3-4 foi de dafin</em></li>
<li><em>sare</em></li>
</ul>
<p>Am preparat un bait din vin, ulei de masline, otet balsamic,<a href="http://nicuvar.wordpress.com/2012/01/14/pulpa-de-curcan-picanta-la-tava-cu-legume/img_3057/" rel="attachment wp-att-11249"><img class="alignright size-medium wp-image-11249" title="IMG_3057" src="http://nicuvar.files.wordpress.com/2012/01/img_3057.jpg?w=305&#038;h=228" alt="" width="305" height="228" /></a> sare si celelalte condimente, apoi am tavalit prin el pulpa de curcan, am adaugat feliute subtiri de peperoni, ardeiul gras rosu taiat fasii, cateii de usturoi zdrobiti cu latul cutitului, ghimbirul si am lasat-o sa se marineze cateva ore (de seara pana a doua zi este cel mai bine).</p>
<p>Intr-o tigaie antiaderenta se pune la prajt, in ulei, pulpa bine scursa, cate 4-5 minute pe fiecare parte. Se toarna tot baitul ramas intr-o tava, se adauga felii de telina si morcovi, pulpa de curcan impreuna cu uleiul in care s-a prajit, 80-100 ml apa, se acopera cu folie de aluminiu si se da la cuptor, la foc mediu, ~ o ora.</p>

<p>Scoateti tava din cuptor, desfaceti cu grija folia, intoarceti pulpa pe cealalta parte, acoperiti din nou si dati-o la cuptor inca 20-25 de minute. Indepartati folia si lasati sa se rumeneasca friptura inca ~ 25-30 de minute, la foc mic.</p>

<p>Este atat de moale, aromata si gustoasa ca nu-i mai trebuie nicio garnitura. Poate, cine vrea, colea cate o muratura, gogonica, varza acra, castravecior, gogosar, ceva si atat. Pofta buna.</p>

<p>Noi le spuneam saloane. Pe vremuri, stiti voi care, alea&#8217; &#8230; nu se prea gaseau saloane, decat cu mare coada si atunci dadeai de niste pietre dulci, colorate, nu prea bune. Doar cu noroc gaseai si unele cu o pojghita subtire de ciocolata. Noi la serviciu, la design, eram mai multe fete si dintr-o reteta de fondante, cu nuca si ciocolata, am compilat o reteta de saloane, schimbandu-le forma si ambalajul. Am inceput sa prepar pentru noi, iar cand au vazut colegii &#8220;minunea&#8221; a inceput sa ploua cu comenzi, fa&#8217; si mie, fa&#8217; si mie de se strangeau cate 20-30 de kg pe zi. Cu facutul era destul de usor, cu impachetatul era mai greu. Dar hai ca ne-am luat cu vorba si n-am facut inca nimic. Sa trecem la treaba.</p>

Se intinde calda, presand cu mainile umede, apoi se netezeste cu spatula, pana obtineti un strat de aproximativ 1 cam grosime.</p>
<p>Se pot taia diferite forme: rotunde (cu un paharut), patrate sau va puteti confectiona o forma mica ovala din tabla (poate gasiti si in comert ceva forme micute de piscoturi). Eu mi-am facut o forma ovala din tabla, apoi colegii i-au adaugat un piston cu arc, ca sa imi creasca productivitatea. <img src='http://s0.wp.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />  Dupa ce taiati bomboanele le asezati pe un grilaj (din frigider) ca sa se usuce si sa se intareasca.</p>

<p>Puteti modela chiar si bilute, cu mana umeda. Puneti ciocolata la topit in bain marie, neaparat cu capac, adaugati uleiul, pentru luciu.</p>

<p>Treceti fiecare bombonica cu o fata prin ciocolata si asezati-o din nou pe gratar. Daca doriti, dupa ce se intareste ciocolata de pe bomboane, puteti imbraca si cealata parte cu cioclata (chiar si alba). Pana se intareste ciocolata de pe bomboane pregatiti ambalajele. Din servetele albe pregatiti patrate cam de 10 x 10 cm, cu franjuri la capete si patratele mai mici, cam de 8 x 8 cm, de staniol colorat (ambalajele de la tot felul de dulciuri si ciocolate, hartii colorate, folie subtire de aluminiu, etc.), apoi puneti fiecare bombonica pe hartia cu franjuri si le infasurati in staniol.</p>

<p>Dupa atatia ani, acum cand se gasesc tot felul de bombonele de pom, le-am dus dorul alora facute in casa si tare bune mai sunt. Din ingredientele de mai sus ies aproape 2 kg de saloane. <p>Crema se prepara foarte rapid si usor, dar trebuie facuta cu o zi inainte, ca sa se intareasca la frigider. Puneti intr-o craticioara, la foc mic, frisca nebatuta, iar dupa cateva minute, cand se incalzeste, adaugati toata ciocolata rupta in patratele si amestecati cu un tel micut pana se topeste. Adaugati unul taiat bucati si esenta de rom, amestecand in continuare cu telul. Dupa vreo doua<a href="http://nicuvar.wordpress.com/2011/03/18/tort-de-ciocolata-cu-blat-de-caise-2/img_0244/" rel="attachment wp-att-10043"><img class="alignright size-medium wp-image-10043" title="IMG_0244" src="http://nicuvar.files.wordpress.com/2011/03/img_0244.jpg?w=305&#038;h=228" alt="" width="305" height="228" /></a> minute luati craticioara de pe foc si amestecati in continuare pana omogenizati perfect crema. Este moale, dar se intareste perfect in cateva ore la frigider.</p>
<p>Imbracati o forma (tava de chec, craticioara, forma de tort patrata sau rotunda, etc.) cu folie de aluminiu si ungeti-o putin cu ulei. Se lucreaza mai usor cu forme dreptunghiulare.</p>
<p>Asezati biscuiti pe margini si primul strat pe fundul formei. Inainte de a aseza fiecare biscuit, inmuiati-l scurt in siropul preparat din zahar ars, apa si esenta de rom. Intindeti un strat de crema cam de 5-6 mm grosime, continuati cu biscuiti insiropati, din nou crema si tot asa pana incheiati cu un strat de biscuiti. Pastrati crema pentru imbracat tortul.</p>

<p>Dati forma la frigider pentru 3-4 ore, apoi puteti rasturna tortul pe un platou. Indepartati folia, imbracati-l in crema si decorati cu frisca, bombonele colorate, ciocolata alba, jeleuri, fructe confiate, trandafiri de zahar sau ciocolata, etc.</p>

<p>Crema va ia maximum 5 minute, iar montarea tortului inca 15-20 de minute din timpul dumneavoastra pretios. Rezultatul &#8211; ca un tort la care ai fi lucrat jumatate de zi. Daca nu e pentru copii, puteti adauga si doua-trei lingurite de ness in sirop.</p>

<p>Faina trebuie sa fie la temperatura camerei. Se pune intr-un castron si se toarna in mijloc apa calduta in care ati dizolvat sarea, uleiul si otetul. Se framanta pana se desprinde aluatul de pe maini si castron, apoi se trece pe planseta si se continua framantatul, lovindu-l din cand in cand de planseta, pana ce aluatul devine elastic si moale.</p>
<p>Se acopera apoi cu o cratita fierbinte si se lasa sa stea 15-20 de minute, timp in care va ocupati de dovleac. Taiati-l in bucati nu prea mari si indepartati coaja si semintele, apoi dati-l pe razatoarea mare, adaugati toate ingredientele pentru umplutura (in afara de gris). Se incalzeste putin, la foc mic, pana incepe sa lase zeama, cam 5 minute.</p>

<p>Impartiti aluatul in 5 parti si incepeti sa intindeti foile. Puneti pe masa de lucru o fata de masa peste care presarati faina. Intindeti o bila de aluat cu sucitorul, ungeti mainile cu ulei si cu dosul palmelor intindeti usor foaia, apoi asezati-o pe masa trageti de ea de jur imprejur cu mana mereu unsa pana se intinde foarte subtire. Lasati-o sa se zvante putin, ungeti-o si presarati putin gris, apoi intindeti uniform peste foaie o cincime din umplutura. Rulati apoi foaia cu ajutorul fetei de masa si rasturnati-o in tava unsa si tapetata cu faina.</p>

<p>Procedati la fel cu toate foile. Nu mi-au incaput decat 4 in tava cuptorului, asa ca pe ultima am facut-o rotunda, cu un mar in mijloc si am copt-o la cuptorul cu halogen. Am decorat placintele cu miez de nuca si le-am uns cu ulei deasupra.</p>

<p>Dati tava la cuptorul preincalzit, la foc mediu, 35-40 de minute, pana se rumeneste frumos. In cuptorul cu halogen am setat la 175 de grade, 35 de minute.</p>

<p>Miroase atat de bine si este atat de gustoasa, apetisanta ca o mananci cu ochii. M-am sculat noaptea pe la trei si am mai mancat o portie. Placinta rotunda le-am dus-o parintilor mei care s-au lins pe toate degetele. <p>Taiati pulpa felii de 15-20 mm grosime si puneti-le intr-o tava nu prea mare, putin suprapuse una peste alta. Taiati felii de 5-6 mm grosime marul si telina si intercalati-le intre bucatile de carne. Ceapa curatata si taiata solzisori se adauga impreuna cu usturoiul necuratat, zdrobit cu latul cutitului, rosiile si ghimbirul ras. Asezati din loc in loc cate o frunza de patrunjel, foi de dafin si celelalte condimente.</p>

<p>Indepartati folia si lasati friptura la cuptor inca 35-40 de minute, la foc mic, sa scada si sa se rumeneasca frumos. Cand serviti friptura la masa, impreuna cu cateva legume din tava, mixati sosul care ramane si turnati-l peste friptura si garnitura. Eu am servit cu piure de cartofi. Pofta buna.</p>

<li><em>patrunjel verde/uscat</em></li>
<li><em>4 linguri de ulei</em></li>
<li><em>cimbru, dafin, coriandru, oregano</em></li>
<li><em>sare, piper dupa gust</em></li>
</ul>
<p>Puneti la fiert (in oala de fiert sub presiune) carnea, in apa rece cu putina sare, luati spuma cand clocoteste si adaugati 1 morcov, 1 ardei gras, o ceapa, albitura si puneti capacul. Lasati sa fiarba la foc mic<a href="http://nicuvar.wordpress.com/2011/11/02/vitel-inabusit-cu-legume-si-sos-de-ceapa-o-tocanita-mai-altfel/img_2626/" rel="attachment wp-att-11089"><img class="alignright size-medium wp-image-11089" title="IMG_2626" src="http://nicuvar.files.wordpress.com/2011/11/img_2626.jpg?w=305&#038;h=228" alt="" width="305" height="228" /></a> vreo doua ore (in oala de fiert sub presiune ~o ora) pana se inmoaie bine carnea.</p>
<p>Intre timp curatati cepele dupa ce au stat vreo 10 minute in apa rece (n-o sa va usture ochii deloc) si tocati-le nu prea marunt. Se taie intai in jumatate si apoi feliute subtiri. Curatati si taiati felii subtiri morcovul ramas si puneti-le la calit in ulei intr-o cratita mai mare sau oala de tuci.</p>
<p>Dupa cateva minute adaugati ceapa, rosiile curatate de pielita si taiate feliute subtiri, usturoiul maruntit, ardeiul gras ramas taiat fideluta, ardeiul iute si condimentati. Lasati sa se caleasca la foc mic, apoi adaugati pasta de ardei si cateva polonice din zeama in care fierbe carnea.</p>

<p>Dupa ce s-a inmuiat bine ceapa, se scoate din supa carnea bine fiarta si se pune in tocanita. Daca mai trebuie, completati cu putina zeama din supa si lasati sa mai fiarba impreuna ~20 de minute, pana scade. Adaugati patrunjel si dregeti gustul de sare, piper, condimente. Cine doreste poate ingrosa putin sosul cu 1-2 lingurite de faina desfacute in putina apa.</p>

<p>Se serveste calda cu mamaliguta, cate un ardei iute, muraturica, etc. Supa care va ramane este nemaipomenita, concentrata, puneti doar taitei sau galuste si s-a rezolvat si felul intai. Pofta buna.</p>

<p>Ardeii kapia se coc la foc iute si se pun intr-un vas presarati cu sare, pe masura ce sunt copti. Se acopera vasul cu un capac, ca sa stea la aburi, cel putin o ora. Se vor curata mult mai usor. Spalati-va din cand in cand mana cu apa. Se curata cotoarele si semintele.</p>
<p><em>Cand coaceti ardeii este foarte bine sa acoperiti aragazul cu folie de aluminiu. Nu se va murdari deloc.</em></p>

<p>Intre timp, taiati  ardeii grasi in bucati mai mari, indepartand cotoarele si semintele si prajiti-i in ulei, la foc mic, pana se inmoaie, amestecand ca sa nu se arda. De fapt fierb in ulei. Adaugati si ardeii copti si lasati sa racoreasca vreo doua ore. Adaugati piperul (eu folosesc piperul macinat, pentru ca imi place sa fie mai condimentati), zaharul si sarea.</p>

<p>Mixati totul (cu un mixer de mana, daca aveti) si puneti pasta de ardei sa mai fiarba 35-40 de minute, adaugand cu 5 minute inainte de sfarsit  pikant fix sau toate ingredientele echivalente. Puneti borcanele sa se infierbante intr-o cratita mai mare, in care ati pus un prosop de bucatarie si cativa cm de apa. Dupa ce s-au infierbantat bine borcannele, umpleti-le cu pasta de ardei, strangeti bine capacele si puneti-le imediat  la perne.</p>

<p>Gogonelele se spala, se lasa la zvantat, apoi se introduc in borcane mai maricele, de 1.700-3.000 ml, frecate in prealabil cu un catel de usturoi. Din loc in loc alternati fasii de ardei, bastonase si feliute de morcov, cate 1-2 catei de usturoi si frunze de telina.</p>

<p>Se acopera fiecare brocan cu cateva frunze de visin bine spalate, apoi se pun borcanele in cratite, cu un stergar de bucatarie sub borcan. Se toarna apa rece in cratite, nu prea multa, cat sa se poata incinge brocanul pe flacara mica a aragazului. Daca folositi bidonele de plastic, nu e nevoie sa fie incinse, pentru ca nu crapa.</p>
<p>Intr-o oala puneti la fiert toate celelalte ingrediente si 1,5 litri apa si se lasa sa clocoteasca 5 minute, apoi, cu un polonic, turnati lichidul peste gogonele. Lichidul trebuie sa fie aproximativ jumatate din volumul borcanelor. Daca veti constata ca este nevoie de mai mult lichid, mai puneti otet si apa, respectand proportiile.</p>

<p>Se umplu borcanele pana sus, apoi se strang bine capacele si se pun imediat la perne. Din 4 kg de gogonele mi-a iesit un borcan de 1,7 l si un un bidonel de plastic de 3 l. Se lasa pana a doua zi, apoi se pun in camara, beci, pivnita, balcon, unde vreti. <img src='http://s0.wp.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>
<p><em>Daca nu vreti sa folositi pikant fix, puneti seminte de mustar, foi de dafin, aspirine si sare mai multa.</em></p>

<li>6 kg ardei kapia (gogosari) cat mai sanatosi si carnosi</li>
<li>250 ml otet de 9 grade</li>
<li>250 g zahar</li>
<li>5 lingurite cu varf samanta de mustar sau 5 aspirine sau 1,5 plic pikant fix</li>
<li>5 foi de dafin</li>
<li>cateva frunze de telina</li>
<li>5 linguri ulei</li>
<li>cateva boabe de piper</li>
<li>5 linguri sare (doar 2 daca folositi pikant fix)</li>
</ul>
<p>Daca ardeii si gogosarii sunt mai verzi, in doua-trei zile se inrosesc bine. Cel mai bine se coc la foc iute pe aragaz. Ca sa nu murdariti aragazul, va sfatuiesc sa-l acoperiti cu folie de aluminiu. Coaceti-i bine pe toate partile, la foc iute si puneti-i apoi intr-o cratita, presarati bine cu sare, pe masura ce se coc. Acoperiti cratita cu un capac si lasati-i sa stea 30-45 de minute. Se vor curata foarte usor. Clatiti mereu mana intr-un castronel cu apa.</p>

<p>Taiati scurt coditele ardeilor. La gogosari se taie codita inainte de a-i coace, asa vor sta mai bine la copt. Puneti-i in borcane, mai mici sau mai mari, dupa preferinta. Eu am folosit de 400, 800 si 1700 g.</p>

<p>Puneti borcanele intr-o cratita mai inalta in care ati asezat un prosop de bucatarie si umpleti -o cu apa rece, pana cu un cm mai jos de gura borcanelor. Asezati cratita cu borcane pe aragaz, la foc mic. In alta cratita puneti toate celelalte ingrediente, zeama pe care au lasat-o ardeii in castron, dupa ce i-ati curatat si 200 ml apa si puneti-o de asemenea la fiert. Cand se infierbanta bine ambele, puneti zeama in fiecare borcan pana sus, avand grija sa presati cu furculita ca sa nu ramana deloc aer intre ardei.</p>

<p>Scoateti pe rand cate un borcan, strangeti bine capacele, folosind prosoape de bucatarie, ca sa nu va ardeti si bagati-le inapoi  la fiert. Din momentul in care apa incepe sa clocoteasca, se lasa la fiert. la foc mic, 30 de minute.</p>

<p>Se pun borcanele imediat la perne sa stea pana a doua zi. Eu i-am pus cu pikant fix iute. Sarea este pentru presarat ardeii ca sa stea la aburi. In seama se pun doua linguri, daca nu folositi pikant fix.Cine vrea mai condimentat poate pune si o lingurita de boabe de piper. Nu va speriat ca e mult zahar, pentru ca in fiecare borcan intra foarte putina zeama.</p>

Dupa cateva zile am desfacut un borcan micut de ardei si a fost nemaiponeit. Nu mai aveti griji cu salata, doar desfaceti borcanul si il goliti pe o farfurie.</p>
